The grapes are subjected to strict quality control being separated by quality and origin so that a wide range of individual wine qualities and specialities can be bottled. Only fully ripe undamaged grapes are fed to the press where the juice is gently extracted in whole cluster pressing. The juice is then fed into stainless steel tanks where a temperature controlled fermentation takes place. Quality-enhancing measures in the vineyards include a high planting density of approximately 5,000 vines per hectare, the use of composted goat muck instead of artificial fertilizers, a low training system and precise canopy management.
